Living in the Imperial Valley, salsa is everywhere and goes on everything. There are certainly many different kinds and everyone has their preferences and favorites. I have had some great salsas at local restaurants and am still after finding the perfect flavor profile when I make it.
This is an easy to make salsa but it pretty good. I call it Salsa Fácile, because the word facile is easy in Spanish. You can embellish it with the flavors you want. This one isn't very hot, so add more jalepeños to make yours have some more heat.
What I think is important is having some fresh ingredients. You certainly don't have to use canned tomatoes, but I do because that's what makes this recipe easy. |

Here's what you'll need: 1 Can Rotel Diced Tomatos with Green Chiles 1 Can Fire Roasted Diced Tomatos 1 Can Tomato Sauce 1 Can Diced Green Chiles

1/2 White Onion 3-4 Green Onions 1 Bunch Cilantro Chipotle and or Jalepeño 1/2 tsp Ground Cumin 1 tsp Salt 1 tsp Black Pepper |

I'm not one for chunky salsas like a Pico de Gallo. I do like some texture, but I prefer a smoother salsa so I blend many of the ingredients. In the blender place the following: can of Rotel tomatos, can of fire roasted tomatos, 1/2 of the can of diced green chiles, all of the 1/2 onion (cut into to large pieces) and 1/2 can of water, one chipotle pepper and or any part of a jalepeño you may be adding. Blend until it is at the consistency you like. |

After you have everything blended up, dump it into a mixing bowl. Chop up the green onions and cilantro and add to the mixing bowl. Add the salt, pepper, and cumin, and the remaining 1/2 can of diced green chiles, mix it all together. I like to add one tsp of Tajin if you have it available. |

Put the salsa in a container and place it in the fridge for a few hours this will give time for all the flavors to marry. Afterwards give it a taste and add anything you feel is missing from it. Again salsas can be very personal. Once you have the flavor profile your are looking for, get some chips, make some tacos, whatever sounds good and pile on the fresh made salsa and flip up the flavor! |
